Tonight in Rijeka's Palach we are preparing tastes of Africa

The cooks of Taste of Home and Food, not boms are still preparing dishes for the tasting and exhibition opening tonight in Palach Gallery.

„I immediately saw the Project Taste of Home as a great idea, because, through work with those disempowered such as refugees and migrants, on one side it is working on their integration into society, and on another hand it is pointing out on the bigger picture and the problem of croatian society with racism and xenophobia; that may not be so apparent right away, just because we don't have a lot of migrants and refugees that have different skin colours. In addition, with Taste of Home it becomes apparent just how much refugees are not taken care of in our society and how much the model and strategies for their integration are missing. This project is a great richness because with it we can understand a lot and realise that in our society there has to be room for everybody, something that becomes even more important when we think of the many Croatians in different countries of the world sharing a similar position with those of migrants in Croatia“, Tajana Josimović, a member of the culinary exchange in Rijeka, concluded about the Taste of Home campaign.

Sadou Diagne, a cook of Taste of Home collective said that he is feeling great at the workshop and that he is enjoying every given opportunity to cook. „I hope people will enjoy the food we prepared“, he added. He shared his recipe of rice with vegetables preprared West-African style:

Ingredients:

2-3 cups of rice

Concentrated tomato

A mix of vegetables (in a can or fresh: carrots, peas, grean beans, cauliflower, corn...)

¼  cups of peanut oil (or olive oil)

2-3 cloves of garlic

1 onion

black pepper

red pepper in powder

salt

Vegeta

Preparation:  

1. In a bowl with oil add concentrated tomato, chopped onion and garlic and all spices, mix and cook for 15-20 minutes.  

2. Then add 1,5 l of water in the mixture and leave it to rest for 40 minutes.

3. Clean the rice and soak it in water for a couple of minutes. Then take the rice and put it in the prepared sauce, so the sauce covers the rice over for about 2 cm.

4. Cook, and after 2 minutes reduce the heat. After cooking for 15 minutes, mix the rice so the bottom rice comes on top. Let it cook for another 5 min.

 

5. After you remove it from the flame, add the vegetable mix and serve.
